One is the "Inside the Apple IIe" Book by Gary B. Little. It is very similar to the older Apple II/II+ reference Manual, explaining all the hardware of the IIe, enhanced (with the 65C02) and unenhanced (with the 6502).

As I seen the first few pages, it deals with the enhanced IIe (65C02) and how it manages bank switching with its 64K of RAM within the system, though it is similar as to how the Apple II/II+ did it with the Language card. It is 86 pages long.
